It is a happy time.  Heirloom tomatoes are in season!  The tie-dye, flavorful king if the tomato world is here!  I want to share a delicious recipe for an heirloom tomato salad.  I learned this at a seasonal produce cooking class at the WFM.

1 heirloom tomato, chopped

olive oil

balsamic vinegar

kosher salt

crushed red pepper

Season to your liking, stir and shake, and let sit in the fridge for 30 minutes so the flavors can meld together.  Serve chilled.

This recipe is so delicious because of the thyme – usually in a recipe like this, basil would be the seasoning of choice.  Thyme is a welcome seasoning surprise!
